Blackberry Fool Overnight Oats
This sugar-free blackberry fool recipe is creamy, sweet, and feels decadent although only uses whole, plant-based ingredients for a low-glycemic treat!
- 1 oz oats
- 4 oz blackberries, boysenberries, or loganberries, divided
- 2 oz banana, mashed
- 4 oz almond yogurt
- 1 oz of your favorite nuts, seeds (optional)
- pinch salt
- lemon zest, or lemon extract (to taste)
First, mash 2oz of the berries, and leave 2 oz berries whole for the topping.
Next, combine oats, the 2 oz mashed berries, banana, yogurt, salt and lemon zest or lemon extract together, and mix well. Leave this in the fridge overnight to set.
Lastly, assemble the blackberry fool overnight oats by topping it with the remainder of the berries, and nuts/seeds, if using. Alternatively, you can also use 8 oz of almond yogurt for this recipe and omit the nuts/seeds.
