This grain free carrot love bowl is perfect for breakfast. It pairs cinnamon sweet potatoes, grated carrots, yogurt and hearty walnuts for a filling meal.
I almost didn’t post this recipe, since it’s more of an assembled meal, but I love it so much that I thought it merited a mention. This grain free carrot bowl is a different take on breakfast that packs in additional veggies, sweet potatoes, cinnamon for warmth and filling omega-3 rich walnuts on top. It keeps me satisfied on mornings when I have loads to do, plus it’s just simple and delicious and doesn’t take a lot of time to make.
Grain Free Carrot Love Bowl Recipe
Vegetable/fruit:
3 oz sliced banana
3 oz grated raw carrot (feel free to steam these too if you want a warm meal)
Protein:
4 oz almond yogurt (or your favorite)
1 oz raw walnuts
Grain substitute:
4 ounces of Cinnamon Roasted Sweet Potatoes
Simply assemble your bowl together. I love to go in this order:
- Layer the almond yogurt on the bottom.
- Sprinkle the sweet potatoes to one side, then carrots next to it, then banana next to that.
- Sprinkle with walnuts on top.
- Enjoy!
For those measuring, this breakfast includes: grain substitute (sweet potato), fruit/veggie, and protein.
