Hi there, and welcome to my blog! I’m Andreea, and the creator of Bright and Simple Life. I love to share my favorite recipes that are flour and sugar free, and in alignment with Bright Line Eating™. But first….
I do not work for Bright Line Eating™. I simply create recipes and have obtained the portions from BLE. To find out more, please visit this link.
My whole life I battled weight. I have a hormonal condition called PCOS. Every doctor I went to told me “your condition will get better if you lose weight, but since you have PCOS it will be really difficult to lose weight”. So I was basically in a catch 22. I searched and researched, went to culinary school to learn to create healthy recipes, and even became a health coach so I can get to the root of my condition. My food became super clean, I chose good options, and my health improved dramatically.

But I was still overweight, which was curious to me. I was eating super clean food (think kale, tahini dressing, fruit, veg, and lentils and sweet potatoes), just a LOT of it. And often. And too much of a good thing is still not a good thing. I finally found Bright Line Eating™ and loved everything I read in Susan Pierce Thompson’s book. I surprisingly found that I scored a 10 on the susceptibility scale and quickly got to work to release sugar (even healthy ones like honey and dates) and flour from my life. I took a 14 day challenge, then I attended an online BLE Bootcamp which further helped me add tools to make this path easy, doable, and sustainable. In 2019, as a result, I lost 50 pounds (and I’m happy to report my hormones are balanced and happy). Even when my doctors said that it would be difficult for me to do so. (In fact, they even asked me what I had done to lose the weight.)
I’ve learned a lot. I keep on learning, and I hope to learn as much from you, the people of this community, as I hope to share. I’m so happy you’re here with me, and I hope that we can grow together on this beautiful path. I’m also excited to show you fun, easy, compliant recipes that help you stay on the bright path longterm.

Some fun facts:
I married the love of my life, Nate, and we have a 20 year old son.
I’m a professional musician. Nate and I have music studio in NJ where we teach private lessons.
If you need a little extra mental and emotional support to make your BLE journey a little easier, check out Nate’s site here.
I love gardening, living a simple life, plant based cooking and have an entire other blog about it (recipes are sugar and flour free but not measured).
I love simplicity and minimalism (hence the name Bright and Simple), and truly believe that whole clean foods are the bees knees…..
I love everything cast iron. And enamelware. You’ll see soon, in my recipes.
Outside time is my favorite time: hikes, gardening, running, walking, playing frisbee, going to the beach (closer to the sunset when it’s not so hot) and a little more gardening! Veggies and flowers are life.
I was born in Romania. I have two E’s in my name (and a lot of people thing I actually misspell my name)….because in Romania, Andreea with two E’s is a female name, while Andrea with one E actually means knitting needle. One of my best friends whose name is Andrea still signs her emails and cards “knitting needle” 🙂
Because I’m Romanian, I also love savory breakfasts. I grew up eating toast, cheese, tomatoes, and cold cuts for breakfast, not the usual American fare. In case you’re wondering why I eat beans for breakfast, I thought I should mention that.
I intend on eating this way for the rest of my life. So while some of these recipes in the world of strict BLE rules may seem too “sexy”, this is how I keep it interesting and sustainable for me. You do you!
Please note: I do not work for Bright Line Eating. I’m just happy to share what’s worked for me, and if you’re struggling, I’d love for you to give it a try and see if it can work for you.
